Pourquoi n'y a-t-il pas mention de la daf 10b Shabbos, et Tosofs? peut-etre les Rishonim en parlent?

The Kollel replies:

You must mean Shabbos 9b and not 10b. If your question is why the Gemara here does not bring the Mishnah in Shabbos, the answer can be found in the Tosfos which you mentioned: Here the Halachah under discussion is eating Matzah b'Tei'avon (or Kavod Yom Tov), whereas in Shabbos the Halachah under discussion is forgetting to pray the Tefilah of Minchah.
