My question is that if we just had one Ribuy, we would allocate it for the least chidush, i.e. Nidme, and not know the inclusion of Kilaim; so this is not a good Hava Amina

Dear Meir,
The Rashba asks your question and answers that if the Torah says only Shor-Kesev without Ez, then the simple meaning would exclude Kilayim since it can't be born from Shor with Kesev (but Nidmeh can come from Shor or Kesev) so the first "O" is used to include Kilayim, which would have been excluded, even though it's a bigger Chidush than Nidmeh.
