(1) The Gemara concludes (51a) that Rebbi Yirmeyah's view is the correct one.
(2) Even though the Simchas Beis ha'Sho'evah is not part of the Avodah of the Korbanos, the Chalil playing during the Simchas Beis ha'Sho'evah nevertheless overrides Shabbos. The reason is because the Simchah of the Beis ha'Sho'evah is a Mitzvah, and the prohibition against playing a Chalil on Shabbos is only a Shevus. The Shevus of playing the Chalil is suspended for the sake of performing a Mitzvah in the Mikdash (Rashi 51a, DH Hachi Garsinan).
(3) The reason why playing the Chalil of the Korban overrides Shabbos is because playing the musical instruments while the Levi'im sang was a primary part of their song (and thus the Chalil was part of the Avodah of the Korban). Alternatively, playing the Chalil is a Simchah Shel Mitzvah, so even though musical instruments are not a primary part of the song of the Levi'im, the Chalil, which is prohibited on Shabbos only mid'Rabanan, may be played on Shabbos (see footnote 2 above).
