Why, therefore should the mei chatos drunk by the cow taking it out of its mei chatos status, be able to metameh (as it was never tumeh to start off with) ?

Mei Chatas is Tamei on the level of Av HaTuma. See Mishnayos Keilim 1:1,2. Also see Rambam Hilchos Para Aduma 15:1. Only a toucher or lifter of Mei Chatas for the sake of sprinkling does not become Tamei.
