Dear Mark,
The Keivah is the 4th stomach of the animal (abomasum) after the food passed through the Keres, Beis HaKosos and Hemses. See Chulin, Schottenstein edition 42a, footnote 8 with picture which explains at length.
Deer- there is no Isur of Chelev -fat, but Gid HaNashe is forbidden both by Behema and Chaya (Chulin 89b in the Mishna)
