Hello, in the mishna we see the case of a person who does 8 averias with one action when he plows with consecrated mixed species of ox and donkey, yoked in a vineyard of kilayim etc.

My question is, why dont they add a ninth aspect which is very appropriate to the masechta; the case where he did all the above and the Ox is muzzled. "You shall not muzzle an ox in its threshing". Is it because this is plowing and not threshing?

Yes, you are right, the prohibition of muzzling does not apply when the ox is plowing. This is because there is nothing that the ox could eat at that time, and the prohibition of the Torah is to prevent the ox from eating.
